Hey everyone, I have a cookbook recommendation for you. We got "Better Homes and Gardens Easy Everyday Cooking" as Sam's Club about a month ago and it's our favorite cookbook now. Everything I have made from it has been fairly simple and so yummy. Even Emma's picky friends have liked the recipes. My favorite thing has been all the meatless dinners that are really tasty - and filling too (beans are the key). I'll share one recipe here but then you need to go get this cookbook. I had a really hard time deciding which recipe to do. I remember we all liked Sheperd's Pie so here is there meatless "Savory Shepherd's Pie." It got a rave from Emma and her friend Lizzy.
Ingredients:
12 ounces potatoes (I increased this)
2 cloves garlic, minced
1/2 tsp dried basil, crushed
2 Tbs margarine or butter
1/4 tsp salt
2 to 4 TBS milk
1 medium onion, chopped
1 medium carrot, sliced
1 TBS cooking oil
1 15-ounce can kidney beans, rinsed and drained
1 141/2-ounce can tomatoes, drained and cut up
1 10-ounce package frozen mixed vegetables or whole kernel corn
1 8-08nce can tomato sauce
1 tsp Worcestershire sauce
1/2 tsp sugar
1 cup shredded cheddar cheese
Paprika (optional)
1. Peel and quarter potatoes. In a covered large saucepan cook popatoes in a small amount of boiling, lightly salted water for 20 to 25 minutes or until tender. Drain.
2. Mash potatoes. In a small saucepan cook garlic and bail in margarine or butter for 15 seconds. Add to mashed potatoes along with salt. Gradually beat in enough of the milk to make light and fluffy. Set aside.
3. For filling, in a medium saucepan cook onion and carot in hot oil until onion is tender. Stir in beans, tomatoes, frozen veggies, tomato sauce, Wor. sauce, and sugar. heat until mixture is bubbly.
4. Transfer filling to an ungerased 8x8 baking pan. Drop mashed potatoes in 4 mounds over filling. Sprinkle with cheddar cheese and, if desired, paprika. Bake in 375 oven for 25 to 30 minutes or until heated through and cheese starts to brown. Makes 4 servings.
Nutrition info per serving: 456 calories, 19 g fat (8 g sat. fat), 31 mg chol., 60 g carbo, 20 g protein.
